SAFFRON

Iran is the largest producer and exporter of saffron in the world, which exports saffron to most European countries, including Spain. Saffron is classified into different categories: Dasteh (bunch), Pushal, Sargol and Negin.

Dasteh (bunch) saffron or another name for it “Bundle” (Dokhtar Pich), refers to the full filament of saffron, including stigma (red part) and style (white part). This type of saffron has less aroma and color than other types.

“Pushal” saffron has less style (between 1 to 3 mm) and therefore has more aroma and color than Dasteh (bunch) saffron. This type of saffron is graded from 1 to 3 and is divided into “Ghalamdar” and “Ordinary” based on its appearance.

“Sargol” saffron contains only saffron stigmas and has the highest consumption. This saffron is graded based on the appearance of its stigma (thickness, small and large, and cut).

“Negin” saffron is similar to “Sargol” saffron and it differs from “Sargol” type in its appearance. In “Negin” saffron, three stigma branches are stuck together and there is no cut.

This saffron is divided into two categories: “Shebhe-Negin” (pseudo-gem) and “Super Negin” (super gem).
